Here’s a great way to substitute pastas and noodles with a much lighter variation, and a fantastic way to get more veggies in your diet.

In this dish:
1 zucchini (spiraled into noodles) – If you don’t have a spirazlier, you can julienne or thinly slice your zucchini with a knife
1 grated red beet (these guys are good blood cleansers)
1 stalk of celery, thinly sliced
1/5th red onion, finely chopped
handful of chopped parsley
handful of loosely chopped mint
Dressing:
hemp oil
couple “glugs” of balsamic vinegar
spoonful of hemp butter (can use another nut butter)
sea salt
black pepper
ground mustard seed
dash of cayenne pepper
hemp seeds sprinkled on top
The balsamic vinegar worked really well with the beets – in colour and in taste because it absorbed its sweetness and kept it nice and tart. In the future some cranberries would rock this dish.
