Lemony Forbidden Rice with Spinach

The name sounds pretty sexy huh?

According to the legend, this grain was reserved only for the emperors of China and referred to as ‘longevity rice’. It is a natural source of the antioxidants called anthocyanins, the purple pigments found in blueberries and the superfood acai, but without the sugar!

It also has a delicious roasted nutty taste, fiber and protein. Go ahead, eat like an emperor. How can you resist?


Lemony Forbidden Rice with Spinach
(gluten-free, dairy-free, soy-free, nut-free)
servings: 3-4

1 cup forbidden rice
2 TBS coconut oil
1/4 cup chopped fresh cilantro
4 large handfuls of baby spinach
zest of 1 lemon
2 TBS fresh lemon juice
pinch of sea salt
pinch of pepper
1/2 cup chopped sundried tomatoes
1 avocado, sliced (optional)

1. Combine the rice with 2 cups of water and a pinch of sea salt in a pot. Bring to a boil over high heat. Cover, reduce heat and simmer for 30 minutes. Remove from heat. Let stand covered for a few minutes, then fluff with a fork.

2. Mix all the remaining ingredients, except the avocado, into the pot with the cooked rice and mix well. The heat from the rice will wilt the spinach nicely!

3. Serve on a plate or in a bowl and top with fresh avocado slices. Enjoy!
